Healthy St. Patrick’s Day Recipes

You don’t need food coloring to have delicious green food this St. Patrick’s Day. Check out our recipes to see how you can stay healthy and green this week!

Covered in green. That’s what St. Patrick’s Day eating is all about! However, you can ditch the food coloring for some delicious and natural green alternatives! Here is a list of a few of our favorite mean-green recipes that won’t take you off track!

 

This for That:

Swap your green beer for a green smoothie! This delicious blend will satisfy your sweet tooth and make you feel good for drinking it. You know the feeling you get—you drink a green smoothie and all of the sudden you feel a surge of healthy energy—who wouldn’t want that on St. Patty’s Day!?

Green Dream Smoothie:  

1 Cup Spinach 
¾ Cup of Pineapple (Frozen)
1/2 Cucumber
1 Celery Stalk
Coconut Water (Cover the contents in blender cup or 1-cup container)
(bonus: add ice cubes if desired)

Green smoothie for St. Patricks Day

Add all ingredients to your blender (Putting pineapple, cucumber, and celery at the bottom and top with the spinach so that the blender can grab those fruits and veggies) and blend until smooth! Add ice if you desire a colder drink. This sweet and delicious green drink is good for body and soul!

You may be craving some fish and chips on St. Patty’s day, but we suggest you swap those deep-fried desires for a delicious salad!

Green Goddess Dressing

½ Cup of Tahini
½ Cup Water
1½Cup Fresh Cilantro
1 Clove Garlic (Add more if you are a garlic person! I personally use 3)
2 TBSP Apple Cider Vinegar
½ Fresh Lime Juice (About 1.5 tsp)
Salt to taste

Ingredients for tahini cilantro dressing



Simply add all of the ingredients to your blender and blend until smooth. Try it with a spoon and add more salt/lime as desired.

Not only is this dressing absolutely delicious, but it is also vegan so all of your vegan and veggie friends can enjoy it too!

Green Goddess Salad

1 Bag of a Green Salad Mix
1 Handful of Arugula
½ Purple Onion, Chopped
1 Med Cucumber, Cubed
1 Radish, Sliced
1 Avocado, Sliced
1 Red Pepper, Chopped
½ Pound Ground Turkey or Ground Veggie Meat (Optional)



Layer your salad with greens at the bottom, chopped veggies on top, and meat on the side or on the very top as preferred. Finish it off with our Green Goddess dressing. This salad is so good it will make your vision better! Feel free to get creative and add your favorite salad toppings. We often add some organic corn cooked in a little bit of chili powder and paprika to make this have more of a Spanish flavor.
